About me
My name is Stefano, I was born and raised in Milan, Italy.
My first encounter with Japan was during high school, thanks to a friend of Japanese origin. Food was the first aspect of Japanese culture that hit me: in particular, a simple yet earthy and warm ochazuke my friend’s mother prepared one winter evening.
From that moment on, I treasured every call for dinner at my friend’s house, for every invitation was an occasion to discover a new, tasty Japanese dish.
Fast forward a couple of years, I moved to what in Japanese was called Tenka no daidokoro – “the kitchen of the Country”- the city of Osaka.
Living here in Osaka for the last four years, I came in contact with the full breadth of Japanese Culinary Tradition: from the rich, flour-based specialties of the city like Takoyaki and Okonomiyaki to beer snacks like Yakitori.
And yet, what impressed me and changed my dietary habits the most is the simple yet elegant traditional Japanese Cuisine: Washoku.
